Recipes To Get You Through Your Post-Thanksgiving Crash

The Turkey Day hype is over.

Burnt to a crisp in the oven, like your crazy spouse’s apple pie. Who let them bake anyway?

You’re feeling burnt out too. The leftovers are gone and you don’t really feel like cooking.

So, check out these quick and easy recipes to hold you over for this week!

 

Shredded Chicken Thai Bowl

Ingredients:

Rotisserie chicken (or leftover turkey), shredded

3 cups white or brown rice, cooked

Handful of shredded carrots

Handful of mixed greens

1-2 Tbs peanuts

Thai peanut sauce

Bunch of cilantro

Instructions:

If using chicken, carve rotisserie chicken then shred using your hands or two forks

Cook rice (follow the instructions on the package)

Bottom layer = rice, middle layer = chicken

Add the following ingredients as the top layer, to taste = shredded carrots, mixed greens, peanuts, and cilantro

Drizzle with Thai peanut sauce to taste

Call it a day!

Roasted Everything

Ingredients:

1-2 lbs chicken breast

4 Tbs olive oil

Choice of spice(s)

Brussel sprouts, halved

Broccoli, cut into florets

Sweet potatoes, whole

Instructions:

Preheat your oven to 350 degrees

Add all of your chicken to one pan, drizzle with 1 Tbs olive oil, cover both sides and add spices

Bake for 20-30 minutes, make sure it’s cooked all the way through

On another pan, spread out your brussel sprouts and broccoli

Add the rest of your oil and add salt and pepper. Bake for 45 minutes 

On your last baking pan, add your sweet potatoes and bake for 30-45 minutes

Call it a day!

 

It’s okay if you don’t feel like creating a four-course meal every night after Thanksgiving. You’re tired! And sick of preparing food for everyone!

We get it. And, don’t let this tough week turn into two and three and four weeks of “Screw it, we’re having takeout again!”

Meal prepping can be as easy as throwing a few things in the oven and letting them do their thing.
