No Energy to Cook Tonight? Try This Easy Crockpot Recipe!

What time did you log off of work?

Did you feel like cooking? Or did you call the local (and delicious) taco place for takeout again?

If you answered with "Ughhh, later than I expected. I may have had a marg while I waited..." It's okay! A lot of people fall into the 'takeout is easiest' trap. That's not so terrible. It can just be tough on your wallet and your confidence in the kitchen!

So what can you do about it now that you're aware of this?

Take that crockpot out of the cabinet above the fridge! It's time to use it again...

 

Crockpot Chicken Burrito Bowl

Ingredients:

1 pound boneless, skinless chicken breasts

1 packet taco seasoning of your choice

15 oz can of black beans, rinsed and drained or refried beans

1/2 cup chopped red onions

15 oz jar salsa of your choice

6 servings of cooked brown or white rice

Toppings (pick & choose):

Mixed greens

Chopped tomatoes

Chopped chilies

Veggies

Shredded cheese

Hot sauce

Avocado or guacamole

Sour cream

Chopped green onions

Cilantro

Instructions:

Layer ingredients in order into crockpot: chicken, beans, taco seasoning, onions and salsa

Cook on high for about 4 hours or low for about 6-8 hours

When cooked through, shred chicken then stir to combine ingredients

Serve over rice and add your favorite toppings!

 

It's okay to eat takeout. It's great to support local businesses. It's okay to enjoy your food!

The really cool thing about cooking for yourself is: you know exactly what you're putting into your body. If it can be delicious as well, that's a win-win.

So, plan when you'll dust off that crockpot and get to cookin'!
