Autumn’s Here! Check Out The Most Nutritious Ways to Eat Pumpkin

Just kidding… but we did think this would be a wonderful theme for the best (and coziest) time of year: pumpkin recipes!

We want to give you some delicious recipes that will satisfy your need for warmth and comfort this fall. Whip up one of the pumpkin recipes we've outline for you below, and let us know how it went!

 

Instant Pot Hearty Pumpkin Soup

Ingredients:

15-16oz can pumpkin puree

6 carrots cut into chunks

½ medium yellow onion cut into chunks

2 ½ tsp minced garlic

1 tsp minced ginger

3 cups chicken or vegetable broth (homemade is best!)

1 cup full fat coconut milk

Salt and pepper to taste

Instructions:

Place pumpkin, carrots, onion, garlic, ginger and broth into the Instant Pot

Stir to combine all ingredients

Seal lid and cook on the manual setting for 8 minutes

Quick release or naturally release pressure when cycle is complete

Use an immersion blender to puree the soup until it’s smooth

Stir in coconut milk and add salt and pepper to taste

The Most Delicious Pumpkin Muffins

Ingredients:

5 eggs 1 cup pumpkin puree

¼ cup butter or softened coconut oil

½ cup coconut flour

1 tsp baking soda

1 tsp vanilla extract

2 Tbsp ceylon cinnamon

¼ cup local natural honey

½ bag chocolate chips

Instructions:

Preheat the over to 400 degrees F

Line muffin tins or lightly grease with choice of fat

Put all ingredients in a bowl and mix with a large whisk until smooth

Scoop into muffin tins

Bake for approximately 12-19 minutes until set in middle and browned
