Healthy Appetizers For Football Sunday
It’s a day before the game and your partner has invited some other couples to your house. “Great.” Now you get to clean up and cook these people some food.
On top of that, you were trying to avoid this type of event because the temptation of less healthy foods.
Oh, and your partner’s friend’s wife is a snobby food blogger so now the pressure’s really on.
Finger foods like cheese and crackers, pigs in a blanket and cocktail shrimp just won’t do.

Chicken Salad On Sweet Potato Coins
Ingredients:
4-6 sweet potatoes
Olive oil or cooking spray
1 rotisserie chicken, cooled
Choice of regular or vegan mayo
¼ cup walnuts, chopped
¼ cup cranberries, chopped
Instructions:
Preheat oven to 375 degrees
Grease pan with olive oil or cooking spray
Wash and cut sweet potatoes, cut into coins and bake until browned
While your potatoes are in the oven, carve the rotisserie chicken then shred using two forks
Add mayo, walnuts and cranberries until you get the consistency you want
Put chicken salad on sweet potato coins and enjoy!
Sweet Balsamic Tomatoes and Mozzarella
Ingredients:
2-3 beefsteak tomatoes
2 tbsp balsamic vinegar
1 tbsp local honey
2 tbsp olive oil
1 package fresh mozzarella
Small handful of basil
Instructions:
Start by slicing tomatoes about ¼” thick
Slice the same amount of mozzarella ¼” thick
Lay out tomatoes and mozzarella staggered on top of one another
Drizzle honey, olive oil and balsamic over combination
Add torn basil on top and enjoy
Mexican Layer Dip
Ingredients:
1 container hummus ½ cup salsa
1 cup cooked black beans
¼ cup red onion
2 handfuls romaine lettuce, chopped
1 ripe avocado
2 tbsp lime juice
1 handful cilantro leaves, chopped
2 tbsp chili powder
Instructions:
Add chili powder to hummus, stir, spread on bottom of serving dish
Drain extra liquid from salsa and add as next layer
Add remaining ingredients in order as listed: black beans, romaine and onion
Combine lime juice and avocado, and add as top layer
Sprinkle with cilantro and put into fridge until ready to serve
Eat with choice of chips and enjoy
